What's for Supper?

I'm always on the hunt for fresh new supper ideas. We're having meatloaf, fresh corn(so fresh I need to go pick it right now), and homemade bread tonight. What are you making?

I grew up detesting meatloaf. I thought it was just disgusting. Then, I tried this meatloaf and my family LOVES it. Here's the recipe:

2lbs ground beef
~1.5 C bread crumbs. You can make your own or buy a cheater package of store bought ones(that's what I did in these pictures)
~1 egg
~A few cranks on the pepper grinder
~1ish C pizza sauce. There are several ways about this. You can a)buy jarred pizza sauce and use the whole jar, b)make it semi-homemade using a recipe like mine here, or go for an all out from scratch sauce which is what I would be doing tonight if I had any red tomatoes... grrr.... I'm settling for option B.

So, you dump all of that in a bowl, roll up your sleeves and mush it together. Ewww....
Then, spread it out in a square glass baking dish.

Next, make the sauce:

~1/4 C ketchup
~3 T sucanat(or brown sugar-as pictured)
~1/2 t ground mustard

Stir it up and spread over your meat. Pop it in the oven @ 350 for an hour and voila. Easy peasy. I'd show you the finished product, but it's in the oven. :)

Mmmmm..I agree, that's a super meatloaf recipe. I think the topping is the best part.

Right now in the oven, I have chicken breasts, topped with a can of mushroom soup and 1/3 C. sour cream. On top of that is some Chicken Stove Top Stuffing. Baking at 375 for 40 min. or so. Nothing too fancy, but it sure smells yummy!

That's pretty funny because today we had mini meatloaves with corn and a side of pasta for dinner (the side of pasta is for my son and hubby, who get upset if there isn't a visable starch in the meal :) ) We're on the same thought process, I guess!

We had spaghetti (yuck) and meatballs (double yuck). I don't like it, but everyone else does, and it's way easy and fast. But when Mitch was cooking on Wednesday night we had chicken & dumplings. It was the first time we'd made it, and it was so yummy. Our kids, who never eat anything new, were a LOUD chorus of complaining, and Patrick (to whom almost every meal is new) just laughed. :) It wasn't all bad, by the end of the meal most of the kids were enjoying it.
